Turducken Roast

Season the roulade with salt & pepper, rub with a little oil and place on a wire rack in a shallow baking pan. Roast I na preheated 400 degree oven for about 30 minutes. Baste with pan drippings or glaze and reduce heat to 325 degrees. Continue to cook for another 1 – 1.5 hours, basting every 20-30 minutes, until the internal temperature is 165 degree.
