Herb Stuffed Boneless Leg of Lamb

Place lamb leg on a wireless rack in a shallow roasting pan. Roast in a preheated 425 degree oven for 15 minutes. Lower the heat to 325 degrees and continue roasting until an internal temperature of 135 degrees for medium rare; about 15 – 20 minutes per lb. Add an additional 5 minutes per lb. per level of doneness. Allow to rest for 20 minutes before slicing.
