Block & Blade Porchetta Pork Roast
Roast on a wire rack in a roasting pan at 300°F for 2 hours, or until the internal temperature reaches 160°F, basting with pan drippings every 30 minutes. Once pork reaches temperature, increase temperature to 425ºF and cook for another 10-15 minutes until skin is very crispy
