Campfire Whole Duck

Preheat oven to 350 and prepare a roasting pan with a rack. Score duck skin in a cross-hatch pattern, without cutting into the meat. Season with salt & pepper and stuff with garlic, lemon, and other vegetables of your choice. Roast the duck for 30 minutes per pound (total 3 horus for 6 lb. duck). To start, roast breast side up for 40 minutes, then flip the duck upside down and roast for 20 minutes. Flip the duck back to breast side up and continue roasting for the remaining time needed, basting every 20 minutes. Cook to an internal temperature of 165 degrees.
